Looking for alternatives to cow's milk, we came up with the following recipe. Almond milk is more and more popular to put in coffee, in smoothies or simply to drink as such. Along with our maple water, this almond milk is lactose free, smooth, full of protein, with a savory taste of almond and maple.
Ingredients
1L of maple water Maple 3
250 g almonds
An electric food processor
A vegetable cotton filter or a clean cloth (no soap smell)
Steps
Soak the almonds in normal water overnight (8 to 12 hours)
Drain the almonds, then rinse them and place them in a food processor
Add 1 liter of maple water and mix at high speed for 2 to 3 minutes
Filter the liquid through the vegetable filter or a clean cloth
Squeeze well with your hands to extract as much almond milk as possible
Keep almond milk cool (it should keep for 4 to 5 days).
If it separates into 2 phases, it needs to be stirred a little.
Don't forget to keep the rest of the almonds from the filter to add to your yogurt or oatmeal - See the oatmeal recipe here .
